5lbs spelt flour
5 C water
1C maple syrup
1C oil
2.5t salt
3pkg yeast

Spelt Challah
1 ¾ cup well fed starter
1 ¼ cup water
2 eggs (optional)
1/2 cup oil
1/3 - ½ cup sweetener ( I prefer maple syrup)
2.5 teaspoons salt
About 8 cups of spelt flour

Mix all ingredients except the flour. Add the flour 1 cup at a time.
Knead into a shaggy dough. Let rest for 20 minutes.
Knead for another 6 – 8 minutes until dough comes together and is no longer sticky.
Cover and let rest for 8 hours.
Braid and rise another 1.5 - 2 hours on a cookie sheet or in a loaf pan
Bake at 350 for half an hour or until browned

*Double for 5 pound recipe.

How much yeast is 3 pkgs? wat kind of pkgs are we talking abt here? Dnt knw how yeast is sold

They’re typically sold in packets of three.
